Nick's Mantra:

Nick’s culinary journey began with his first cooking job at Roy's Hawai‘i, which imparted a lasting influence of Asian and Hawaiian flavors throughout his style of cooking. He spent seven years cooking in Honolulu, highlighted by five years at Chef Mavros, where he met the notorious Mark Noguchi and the bond has endured ever since.

After meeting his wife Tracey, the two moved to the Bay Area where Nick spent 13 years continuing his culinary and hospitality career at some of the city's best restaurants including the Michelin-starred Coi to neighborhood classics. In 2022, he and his family returned to Hawai‘i in hopes to build a stronger sense of community and connected way of life. In his role as Culinary Event & Education Manager, Nick oversees our culinary teams and vendors in menu planning, event preparation, and execution, ensuring high-quality and timely delivery of food and beverages.

When he’s not working, you'll find Nick on the trails with his family and his dog, Louie, at the beach, or reading about how to live longer.
