Rayce’s Mantra:
Rayce grew up surfing with his dad on the island of Kauaʻi. He hopped into the world of hospitality at age 15 washing dishes, and worked his way up through all stations in both the front and back of house, including greeting guests at the Hilton Kauaʻi Beach Resort as a valet and bellman. On Oʻahu, he earned his Culinary Arts Degree at Kapiʻolani Community College in 2018 and worked as a server at Dukes Waikīkī for 12 years. During the pandemic, Rayce volunteered with Chef Hui to help manage food distributions. Now that he is officially on staff, his mission at UMU and Chef Hui is to continue to learn and to support the team in fulfilling our goals while having fun. Good food paired with good company lights Rayce up. He loves cooking and eating the foods of every culture, especially Japanese, and has traveled to Japan five times. Although he doesn’t get out as much as he’d like to, Rayce still surfs…mostly on the south shore, but ideally wherever there are more waves than people.
